Cheesy Beef Stuffed Potatoes

Cheesy Beef Stuffed Potatoes are a delicious, hearty meal that combines tender baked potatoes with seasoned ground beef, melted cheese, and all your favorite toppings. This recipe is easy to make and perfect for a family dinner, meal prep, or a cozy weeknight meal. It’s a satisfying dish with a nice balance of flavors, textures, and plenty of cheesy goodness!


Ingredients:

For the Stuffed Potatoes:

  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder (optional, for a bit of spice)
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (for serving)
  • 2 tablespoons chopped green onions (for garnish)
  • 1/2 cup shredded mozzarella cheese (optional, for extra cheesy goodness)

  • Jalapeños (for a spicy kick)

Instructions:

1. Bake the Potatoes:

  • Preheat your oven to 400°F (200°C).
  • Scrub the russet potatoes clean and poke a few holes in each potato with a fork. This allows steam to escape while baking.
  • Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork. You can also wrap them in foil if you prefer, though they will have a slightly different texture.

2. Cook the Ground Beef:

  • While the potatoes are baking, heat a large skillet over medium heat and add the ground beef. Break up the meat with a spatula as it cooks.
  • Once the beef is browned and fully cooked, drain any excess fat.
  • Add the diced onion and minced garlic to the beef. Cook for about 3-4 minutes, until the onion softens and becomes translucent.
  • Stir in the chili powder, paprika, cumin, and salt and pepper. Taste and adjust seasoning as needed.

3. Prepare the Potatoes:

  • Once the potatoes are done, remove them from the oven and allow them to cool for a few minutes.
  • Carefully slice the potatoes in half lengthwise, then scoop out most of the flesh into a bowl, leaving a small border around the edges to create a “boat” shape.
  • Mash the scooped-out potato flesh with a fork or potato masher. You can add a little butter, salt, and pepper to the mashed potatoes if you’d like to make them extra creamy.

4. Stuff the Potatoes:

  • Take the mashed potato mixture and stir in half of the shredded cheddar cheese and a few spoonfuls of the cooked ground beef mixture. Mix until combined.
  • Spoon the cheesy beef mixture back into the hollowed-out potato skins, packing it in tightly.
  • Top each potato with the remaining cheddar cheese and mozzarella cheese (if using).

5. Bake Again:

  • Place the stuffed potatoes on a baking sheet and return them to the oven for about 10-15 minutes, or until the cheese is melted and bubbly.

6. Serve:

  • Once baked, remove the stuffed potatoes from the oven.
  • Top each potato with a dollop of sour cream, and sprinkle with chopped green onions.
  • Add any additional toppings you like, such as bacon bits, salsa, cilantro, or jalapeños.

  • Potato Texture: If you want extra creamy mashed potatoes inside the skins, you can add a little butter or cream cheese to the mashed potato mixture for a richer flavor.
