Ingredients
1 medium head of cauliflower
1 large egg
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
3 cloves garlic, minced
1/2 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)
Salt and pepper to taste
1 tablespoon chopped fresh parsley (optional for garnish)
1 tablespoon olive oil (for brushing)
Instructions
Prepare the Cauliflower:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Cut the cauliflower into florets and pulse them in a food processor until they resemble rice. Alternatively, you can grate the cauliflower using a box grater.
Cook the Cauliflower:
Place the cauliflower rice in a microwave-safe bowl and microwave on high for 4-5 minutes, or until soft. Let it cool slightly.
Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for achieving a bread-like texture.
Prepare the Dough:
In a large bowl, combine the cauliflower, egg, mozzarella cheese, Parmesan cheese, minced garlic, Italian herbs, salt, and pepper. Mix until well combined.
Shape and Bake:
Transfer the cauliflower mixture to the prepared baking sheet and shape it into a rectangle or oval, about 1/4-inch thick.
Bake in the preheated oven for 20 minutes, or until golden brown and set.
Add Finishing Touches:
Remove the cauliflower bread from the oven. Brush the top with olive oil and sprinkle with additional mozzarella cheese if desired.
Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve:
Let the bread cool for a few minutes before slicing. Garnish with chopped fresh parsley if using.
