Cheesy Chicken and Broccoli Bakes

Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 cup cream of chicken soup (or a homemade version)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/2 cup breadcrumbs for topping

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a baking dish (about 9×13 inches) or individual ramekins.
  2. Prepare Broccoli: If using fresh broccoli, steam or blanch it until tender. If using frozen, thaw and drain excess water.
  3. Mix Ingredients: In a large bowl, combine the cooked chicken, broccoli, cooked rice, half of the cheese, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Mix well until everything is combined.
  4. Transfer to Baking Dish: Pour the mixture into the prepared baking dish or divide it among individual ramekins.
  5. Top with Cheese and Breadcrumbs: Sprinkle the remaining cheese on top. If using breadcrumbs, sprinkle them over the cheese for added crunch.
  6. Bake: Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
  7. Cool and Serve: Let it cool for a few minutes before serving. Enjoy your cheesy chicken and broccoli bake!

Tips:

  • Additions: Feel free to add other vegetables like carrots or bell peppers for extra nutrition.
