Cheesy Chicken Fritters

Ingredients:

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup green onions, chopped
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying (vegetable or olive oil)

Instructions:

  1. Prepare the Mixture:
    • In a large bowl, combine the cooked chicken, shredded cheese, green onions, breadcrumbs, flour, eggs, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
  2. Form the Fritters:
    • Scoop a portion of the mixture (about 2-3 tablespoons) and form it into a patty. Repeat with the remaining mixture.
  3. Heat the Oil:
    • In a large skillet, heat about 1/4 inch of oil over medium heat until hot (about 350°F/175°C).
  4. Cook the Fritters:
    • Carefully place the fritters in the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.
  5. Serve:
    • Serve warm with your favorite dipping sauce, such as ranch, garlic aioli, or hot sauce.

Tips:

  • You can customize the fritters by adding other ingredients like diced bell peppers, corn, or spices for extra flavor.
  • These fritters can also be baked! Preheat your oven to 400°F (200°C) and place the fritters on a baking sheet lined with parchment paper. Bake for about 20-25 minutes, flipping halfway through, until golden brown.
