Cheesy Chicken Rigatoni in Cajun Garlic Cream

Ingredients:

  • 12 oz rigatoni pasta (or penne)

  • 2 boneless, skinless chicken breasts, diced

  • 2 tbsp Cajun seasoning (adjust for spice level)

  • 3 tbsp butter

  • 4 garlic cloves, minced

  • 1 cup heavy cream

  • 1 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • 1 1/2 cups shredded mozzarella (or Italian blend)

  • 1/2 tsp smoked paprika (optional)

  • Salt & pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook Pasta: Boil rigatoni in salted water until al dente. Drain and set aside.

  2. Season Chicken: Toss diced chicken with 1 tbsp Cajun seasoning and salt.

  3. Sear Chicken: In a large skillet, heat 1 tbsp butter over medium-high. Cook chicken until browned (5-6 mins). Remove and set aside.

  4. Make Sauce: In the same skillet, melt remaining butter. Sauté garlic for 30 seconds until fragrant. Pour in chicken broth and heavy cream, stirring. Add remaining Cajun seasoning and smoked paprika. Simmer 3-4 mins.

  5. Add Cheese: Reduce heat to low. Stir in Parmesan and 1 cup mozzarella until melted.

  6. Combine: Add cooked pasta and chicken to the sauce. Toss to coat. Sprinkle remaining mozzarella on top.

  7. Broil (Optional): For a golden top, broil 2-3 mins.

  8. Garnish: Top with parsley and extra Parmesan.

Tips:

  • Extra Spice? Add a pinch of cayenne or red pepper flakes.

  • Veggies: Sauté bell peppers or mushrooms with the garlic.

  • Protein Swap: Try shrimp or sausage instead of chicken.
