Cheesy Herb-Stuffed Potato Rolls Recipe

Ingredients:

For the Dough:

  • 2 ½ cups all-purpose flour
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • ¾ cup warm milk (110°F/45°C)
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 large egg
  • 1 cup mashed potatoes (about 1 large potato, cooked and mashed, with no added butter or milk)

For the Cheesy Herb Filling:

  • 1 ½ cups shredded cheese (cheddar, mozzarella, or a mix)
  • ¼ cup cream cheese, softened
  • 2 tablespoons fresh herbs (such as chives, parsley, or thyme), finely chopped
  • 1 clove garlic, minced
  • ½ teaspoon onion powder
  • Salt and pepper to taste

For the Topping (optional):

  • 2 tablespoons unsalted butter, melted (for brushing)
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions:

  1. Prepare the Dough:

    • In a small bowl, combine the warm milk, sugar, and yeast. Stir and let it sit for about 5-10 minutes until it becomes foamy.
    • In a large bowl, combine the flour and salt. Add the mashed potatoes, melted butter, and the egg. Mix until combined.
    • Pour in the yeast mixture and stir to form a soft dough.
    • Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth and elastic.
    • Place the dough in a greased bowl, cover with a kitchen towel, and let it rise for about 1 hour, or until doubled in size.
  2. Prepare the Filling:

    • In a medium bowl, mix together the shredded cheese, cream cheese, herbs, garlic, onion powder, and salt and pepper. Set aside.
  3. Assemble the Rolls:

    • Once the dough has risen, punch it down and turn it out onto a floured surface.
    • Roll the dough into a large rectangle, about 12×18 inches.
    • Spread the cheesy herb filling evenly over the dough, leaving a small border around the edges.
    • Starting from the long side, roll the dough tightly into a log.
    • Cut the rolled dough into 12 even pieces (you can use a serrated knife or dental floss for a clean cut).
    • Place the rolls in a greased 9×13-inch baking dish, leaving a little space between each roll.
  4. Second Rise:

    • Cover the rolls with a kitchen towel and let them rise for about 30-45 minutes, or until they puff up and are nearly touching each other.
  5. Bake:

    • Preheat the oven to 350°F (175°C).
    • Bake the rolls for 20-25 minutes, or until golden brown on top and cooked through. You can check the internal temperature—it should be around 190°F (88°C) when done.
  6. Finish:

    • Once baked, brush the tops with melted butter and sprinkle with fresh parsley if desired.
  7. Serve and Enjoy:

    • Let the rolls cool slightly before serving. Enjoy them warm, as they’re best served fresh out of the oven!

Tips:

  • You can make the dough ahead of time and let it rise in the refrigerator overnight. Just let it come to room temperature before rolling it out.
