Cheesy Hissy Fit Dip (Loaded Ground Beef & Cheese Dip)

🔥 A spicy, meaty, outrageously cheesy dip that’ll make everyone throw a happy “hissy fit” for more! Perfect for game day, parties, or indulgent snacking.


🍽️ Ingredients

For the Beef Layer:

  • 1 lb ground beef (or ground sausage for extra kick)

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 tbsp taco seasoning (or chili powder + cumin)

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 (10 oz) can Rotel tomatoes & green chiles (drained)

For the Cheese Sauce:

  • 8 oz cream cheese, softened

  • 1 cup sour cream

  • 2 cups shredded cheddar cheese

  • 1 cup pepper jack cheese (for heat)

  • ½ cup heavy cream (or milk for thinner dip)

  • 1 tsp hot sauce (optional)

Toppings (Pick Your Favorites!):

  • Sliced jalapeños

  • Diced tomatoes

  • Chopped green onions

  • Crumbled bacon

  • Fresh cilantro


👩🍳 Instructions

  1. Cook the Beef:

    • In a skillet, brown ground beef with onion and garlic over medium heat. Drain excess fat.

    • Stir in taco seasoning, salt, pepper, and drained Rotel. Simmer 5 mins, then set aside.

  2. Make the Cheese Sauce:

    • In a saucepan, melt cream cheese and sour cream over low heat.

    • Gradually add cheddar, pepper jack, and heavy cream, stirring until smooth.

    • Mix in hot sauce if using.

  3. Layer & Bake:

    • Spread beef mixture in a 9-inch cast-iron skillet or baking dish.

    • Pour cheese sauce evenly over the beef.

    • Bake at 375°F (190°C) for 15-20 mins until bubbly.

  4. Top & Serve:

    • Garnish with jalapeños, bacon, tomatoes, or green onions.

    • Serve hot with tortilla chips, toasted bread, or veggie sticks.
