  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • A pinch of cayenne pepper (optional, for added heat)
  • 1 tablespoon chopped fresh cilantro (optional, for a fresh touch)

Instructions:

  1. Prepare the Dough:

    • In a large bowl, cream the softened butter with the grated cheddar cheese using a hand mixer or stand mixer until light and fluffy (about 2-3 minutes).
    • Add the flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper (if using). Mix until combined.
    • Stir in the chopped jalapeños (and cilantro, if using). Mix until the dough comes together. The dough may be a bit crumbly at first, but just continue mixing, and it will form into a soft dough.
  2. Chill the Dough:

    • Wrap the dough in plastic wrap and chill it in the refrigerator for at least 30 minutes. This helps the shortbread hold its shape during baking.
  3. Shape the Shortbread:

    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Once chilled, roll the dough out onto a lightly floured surface to about ¼-inch thickness. You can either cut the dough into traditional shortbread rectangles, circles, or any shape you like using a cookie cutter.
    • Alternatively, you can roll the dough into a log, slice it into rounds, and bake them as round shortbread cookies.
  4. Bake:

  5. Cool and Serve:
