Cheesy Macaroni and Hamburger Casserole

This is the ultimate comfort food casserole! It’s rich, creamy, incredibly cheesy, and sure to be a family favorite.

Ingredients

  • 1 lb. ground beef

  • 1 onion, chopped

  • 2 cups uncooked macaroni noodles (about 8 oz)

  • 1 (10.75 oz) can cheddar cheese soup, undiluted

  • 8 oz sour cream

  • 8 oz Velveeta cheese, cubed

  • 8 slices American cheese

  • ½ cup grated Parmesan cheese

  • ¼ cup milk

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Salt and black pepper to taste


Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.

  2. Cook the Macaroni: Cook the macaroni noodles according to package directions until al dente. Drain well and set aside.

  3. Brown the Beef: While the pasta cooks, in a large skillet or Dutch oven over medium-high heat, brown the ground beef and chopped onion together until the beef is no longer pink and the onion is soft. Drain off any excess grease.

  4. Combine Everything: Reduce the heat to low. To the skillet with the beef, add the drained macaroni, cheddar cheese soup, sour cream, cubed Velveeta, milk, garlic powder, and onion powder. Stir continuously until the Velveeta is completely melted and the mixture is smooth and combined. Season with salt and pepper to taste.

  5. Assemble the Casserole: Pour the mixture into the prepared baking dish and spread it out evenly. Arrange the 8 slices of American cheese over the top to cover it completely. Finally, sprinkle the grated Parmesan cheese evenly over the American cheese.

  6. Bake: Bake, uncovered, for 20-25 minutes, or until the cheese on top is completely melted, bubbly, and just starting to brown lightly around the edges.

  7. Rest and Serve: Remove from the oven and let it stand for 5-10 minutes before serving. This allows the casserole to set, making it easier to scoop.

  • Pasta Tip: Be careful not to overcook the macaroni, as it will continue to absorb moisture and soften in the oven.

  • Cheese Choices: You can use 2 cups of shredded sharp cheddar cheese instead of American cheese for the top for a more robust flavor.

  • Creamier Casserole: If you prefer an even creamier consistency, add an extra ¼ cup of milk.
