Cheesy Pepperoni Pizza Roll-Ups – Low-Carb & Delicious!

INGREDIENTS

  • 4 low-carb tortillas (or almond flour tortillas for keto)

  • 1 cup shredded mozzarella cheese

  • 16 pepperoni slices (or turkey pepperoni for lighter option)

  • ½ cup pizza sauce (sugar-free if needed)

  • ½ tsp Italian seasoning

  • Olive oil spray (for crispiness, optional)

  • Garlic powder & red pepper flakes (optional, for extra flavor)


INSTRUCTIONS

1. Prep the Tortillas:

  • Lay tortillas flat and spread 1-2 tbsp pizza sauce evenly over each.

  • Sprinkle with Italian seasoning, garlic powder, and red pepper flakes (if using).

2. Add Fillings:

  • Layer ¼ cup mozzarella and 4 pepperoni slices per tortilla.

  • Optional: Add extras like cooked sausage, olives, or veggies.

3. Roll & Secure:

  • Tightly roll each tortilla (like a burrito), tucking in the sides.

  • Pro Tip: Brush edges with water to seal if needed.

4. Crisp Them Up:

  • Air Fryer (Best for Crispiness):

    • Spray rolls with olive oil.

    • Air fry at 375°F (190°C) for 6-8 minutes, flipping halfway, until golden.

  • Oven:

    • Bake at 400°F (200°C) for 10-12 minutes on a parchment-lined sheet.

  • Skillet:

    • Pan-fry in a little oil over medium heat, seam-side down first, until crispy.

5. Serve & Dip:

  • Slice into pinwheels or serve whole with extra warmed pizza sauce for dipping.
