Cheesy Potatoes

Ingredients:

  • 2 pounds russet potatoes, peeled and thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
    • Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
  2. Prepare the Potatoes:
    • Peel and thinly slice the potatoes.
    • Arrange half of the sliced potatoes in an even layer in the prepared baking dish.
  3. Mix Cheeses:
    • In a bowl, combine the shredded cheddar and mozzarella cheeses.
  4. Layer Potatoes and Cheese:
    • Sprinkle half of the cheese mixture over the potatoes.
    • Add the remaining sliced potatoes on top.
    • Sprinkle the rest of the cheese mixture evenly over the top layer of potatoes.
  5. Make the Sauce:
    • In a separate bowl, whisk together the heavy cream, whole milk, sour cream, melted butter, minced garlic, salt, black pepper, and paprika until well combined.
  6. Pour the Sauce:
    • Pour the cream mixture evenly over the layered potatoes and cheese.
  7. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
    • Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden and bubbly.
  8. Garnish and Serve:
    • Remove from the oven and let it cool for a few minutes.
    • Garnish with chopped fresh parsley, if desired.
    • Serve hot.
