Cheesy Quesarito (Taco Bell Copycat)

Double-layered tortillas stuffed with beef, rice, nacho cheese, and chipotle sauce magic!

Ingredients:

For the Filling:

  • 1 lb ground beef

  • 1 packet taco seasoning (or 2 tbsp homemade seasoning)

  • ½ cup water

  • 1 cup cooked white rice (or Mexican rice for extra flavor)

  • ½ cup nacho cheese sauce (store-bought or homemade)

  • ¼ cup chipotle sauce (or mix 2 tbsp mayo + 1 tbsp sour cream + 1 tsp chipotle powder)

For the Quesarito Assembly:

  • 2 large flour tortillas (10-inch) per Quesarito

  • 1 cup shredded cheddar cheese (or Mexican blend)

  • 1 tbsp butter (for toasting)

Instructions:

1. Cook the Beef:

  • Brown the ground beef in a skillet over medium heat, breaking it into small pieces. Drain excess fat.

  • Add the taco seasoning and ½ cup water. Simmer for 5 minutes until thickened. Set aside.

2. Prepare the Sauces & Rice:

  • Warm the nacho cheese sauce (if homemade, melt ½ cup cheddar + 2 tbsp milk + 1 tsp cornstarch).

  • Mix the chipotle sauce (or use Taco Bell’s Creamy Chipotle Sauce).

  • If using plain rice, season with a pinch of salt and lime juice.

3. Assemble the Quesarito:

  • Layer 1 (Cheesy Tortilla):

    • Place a tortilla on a skillet over low heat.

    • Sprinkle ½ cup shredded cheese evenly, then top with a second tortilla.

    • Press lightly and cook until cheese melts (about 1-2 minutes). Flip carefully and cook another 30 seconds. Remove.

  • Layer 2 (Filling):

    • On the cheesy tortilla, spread:

      • ¼ cup nacho cheese sauce

      • ½ cup seasoned beef

      • ½ cup rice

      • Drizzle of chipotle sauce

    • Fold the sides inward, then roll tightly into a burrito.

4. Toast the Quesarito:

  • Heat butter in the skillet and place the rolled Quesarito seam-side down. Toast for 1-2 minutes per side until golden and crisp.

5. Serve & Enjoy!

  • Slice in half and serve with extra chipotle sauce or sour cream.
