Ingredients:

  • 1 packet taco seasoning mix

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup salsa
  • 1/4 cup chopped fresh cilantro (optional, for garnish)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Taco Meat:
    • In a large skillet over medium-high heat, cook the ground beef until browned and cooked through, about 7-10 minutes. Drain excess fat.
    • Add the taco seasoning mix and water to the skillet with the beef. Stir to combine and cook for 2-3 minutes until the sauce thickens.
  3. Prepare the Cheese Sauce:

    • Add the shredded cheddar cheese and Monterey Jack cheese to the skillet. Stir until the cheeses are melted and the sauce is creamy.
  4. Combine Pasta and Sauce:
    • Add the cooked pasta to the skillet with the cheesy taco meat sauce. Stir until the pasta is well coated with the sauce.
  5. Serve:
    • Garnish with chopped fresh cilantro if desired.
