Cherry Tomato Salad with Burrata & Pine Nuts

Ingredients

  • 2 cups cherry tomatoes, halved (mixed colors for beauty)
  • 1 ball (8 oz) fresh burrata cheese
  • ¼ cup toasted pine nuts
  • ¼ cup fresh basil leaves, torn
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic glaze (or aged balsamic vinegar)
  • ½ tsp flaky sea salt (like Maldon)
  • ½ tsp black pepper
  • 1 small garlic clove, minced (optional)
  • ½ tsp red pepper flakes (optional, for heat)

Instructions

  1. Toast the pine nuts in a dry pan over low heat for 2-3 mins until golden. Set aside.
  2. Arrange the tomatoes on a platter. Drizzle with olive oil, balsamic glaze, salt, and pepper. Toss gently.
  3. Place the burrata in the center and tear it open slightly to let the creamy center ooze.
  4. Scatter basil, pine nuts, and optional garlic or red pepper flakes on top.
  5. Serve immediately with crusty bread to soak up the juices!
