Ingredients

  • 1 cup (125g) all-purpose flour
  • 1 ½ cups (120g) old-fashioned rolled oats
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg (optional)
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ¾ cup (120g) raisins (soaked in warm water for 10 mins, then drained)

Optional Add-Ins:

  • ½ cup chopped walnuts or pecans
  • 2 tbsp flaxseeds or chia seeds

Instructions

  1. Prep:
    • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
    • Soak raisins in warm water (to plump them up), then drain and pat dry.
  2. Mix Dry Ingredients:
    • In a bowl, whisk flour, oats, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Cream Wet Ingredients:
    • Beat butter, brown sugar, and granulated sugar until fluffy (~2 mins).
    • Add egg and vanilla, mixing until combined.
  4. Combine & Fold:
    • Gradually add dry ingredients to wet, mixing just until incorporated.
    • Fold in raisins (and nuts/seeds if using).
  5. Bake:
    • Drop 1.5-tbsp scoops of dough onto sheets, spacing 2 inches apart.
    • Bake 10-12 mins until edges are golden but centers look slightly underdone.
    • Cool on sheets for 5 mins, then transfer to a wire rack.
