Chewy Snickerdoodle Cookie Bars

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

For the cinnamon-sugar topping:

  • 2 tbsp granulated sugar
  • 1 tbsp ground cinnamon

Instructions:

  1. Preheat the oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper for easy removal.
  2. Mix the dry ingredients:

    • In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream the butter and sugar:

    • In a large bowl, cream together the softened butter and sugar using a hand mixer or stand mixer. Beat until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla:

    • Beat in the egg and vanilla extract until fully incorporated.
  5. Combine with dry ingredients:

    • Gradually add the dry flour mixture to the butter mixture, mixing until just combined. The dough will be thick.
  6. Prepare the cinnamon-sugar topping:

    • In a small bowl, combine the 2 tbsp of granulated sugar and 1 tbsp of cinnamon.
  7. Spread the dough:

    • Spread the dough evenly in the prepared baking dish, pressing it down to fill the bottom of the dish.
  8. Top with cinnamon-sugar:

    • Sprinkle the cinnamon-sugar mixture evenly over the top of the dough.
  9. Bake:

    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs. The edges should be golden brown.
  10. Cool and cut:

  • Let the bars cool in the baking dish for 10-15 minutes, then transfer them to a wire rack to cool completely.
  • Once cooled, cut into squares and serve.

Tips:

  • For extra chewiness: Make sure not to overbake the bars. They’ll continue to firm up as they cool.
  • Add-ins: You can add white chocolate chips, or chopped nuts like pecans or walnuts for extra texture.
  • Storage: Store these bars in an airtight container at room temperature for up to 5 days or refrigerate for longer freshness.
