Chicken Bacon Ranch Potato Bake Recipe

Ingredients

  • Potatoes:
    • 4 large russet or Yukon Gold potatoes, diced into 1-inch cubes
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon smoked paprika (optional)
    • Salt and pepper, to taste
  • Chicken & Bacon:
    • 1.5 pounds boneless, skinless chicken breasts or thighs, diced into bite-sized pieces
    • 1 packet (1 ounce) ranch seasoning mix
    • 6 slices of bacon, cooked and crumbled
  • Topping:
    • 2 cups shredded cheddar cheese
    • 1/2 cup sour cream (optional, for serving)
    • 2 tablespoons chopped green onions or fresh parsley

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. Roast the Potatoes:
    • In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
    • Spread the potatoes evenly in the baking dish and roast for 20-25 minutes, stirring halfway through, until they start to crisp and brown.
  3. Prepare the Chicken:
    • While the potatoes are roasting, season the diced chicken with half the ranch seasoning packet. Set aside.
  4. Cook the Chicken:
    • Heat a large skillet over medium heat. Add the seasoned chicken and cook until browned and just cooked through, about 5-7 minutes. Remove from heat.
  5. Combine & Bake:
    • Once the potatoes are roasted, add the cooked chicken and crumbled bacon to the baking dish. Toss gently to combine.
    • Sprinkle the remaining ranch seasoning over the top.
    • Cover the dish with shredded cheese and return it to the oven. Bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
  6. Serve:
    • Remove from the oven and let rest for 5 minutes. Garnish with chopped green onions or parsley. Serve with a dollop of sour cream, if desired.

  • Crispier Potatoes: Spread the potatoes out in a single layer to avoid steaming and ensure they roast evenly.
  • Shortcut: Use pre-cooked, shredded rotisserie chicken to save time. Toss it with ranch seasoning before adding to the dish.
