Chicken Sub Salad Recipe

Perfect for subs, wraps, or a fresh salad bowl!

Ingredients:

  • 2 cups cooked chicken (shredded or diced, grilled or rotisserie)

  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)

  • 1 tbsp Dijon mustard (or yellow mustard)

  • 1 celery stalk, finely diced

  • 1/4 cup red onion, finely diced

  • 1/2 cup bell peppers (red/green), diced

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • Salt & black pepper to taste

  • 1 tbsp lemon juice or vinegar (for tanginess)

  • Optional: chopped pickles, jalapeños, or herbs (parsley/dill)

Instructions:

  1. In a large bowl, mix mayonnaise (or yogurt), mustard, lemon juice, garlic powder, paprika, salt, and pepper.

  2. Add chicken, celery, red onion, and bell peppers (and any optional add-ins).

  3. Toss everything together until well coated.

  4. Chill for 30 minutes (if time allows) for flavors to blend.
