Ingredients:

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
  • 1 cup wild rice (uncooked)
  • 4 cups chicken broth
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup slivered almonds (optional, for crunch)
  • 2 tablespoons olive oil or butter

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. Cook the Wild Rice:

  • Rinse the wild rice under cold water. In a saucepan, bring the chicken broth to a boil, add the wild rice, and reduce to a simmer. Cover and cook for about 40-50 minutes, or until the rice is tender.

3. Sauté the Vegetables:

  • In a large skillet, heat olive oil or butter over medium heat. Add the chopped onions, celery, carrots, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.

4. Combine Ingredients:

  1. In a large bowl, mix the cooked chicken, sautéed vegetables, cooked wild rice, sour cream, shredded cheddar cheese, thyme, salt, and pepper. Stir until well combined.
  2. If using, fold in slivered almonds for added crunch.

5. Assemble the Casserole:

  • Transfer the mixture to the greased baking dish and spread it evenly. Top with additional shredded cheddar cheese if desired.

6. Bake:

  • Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the cheese is melted.

7. Serve:

  • Let it cool for a few minutes before serving. Enjoy!
