Ingredients

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • Salt and pepper, to taste
    • 2 tbsp olive oil
    • 1 tbsp butter
  • For the Sauce:
    • 1 cup sliced mushrooms (button or cremini)
    • 3 cups fresh spinach
    • 2 cloves garlic, minced
    • 1 cup heavy cream
    • 1 cup grated Parmesan cheese
    • ½ tsp Italian seasoning
    • ¼ tsp red pepper flakes (optional)
    • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Chicken:
    • Season the chicken breasts with salt and pepper.
    • In a large skillet, heat the olive oil and butter over medium-high heat.
    • Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté the Vegetables:
    • In the same skillet, add the mushrooms and cook for about 3-4 minutes until softened.
    • Add the garlic and cook for another minute until fragrant.
    • Stir in the spinach and cook until wilted.
  3. Make the Sauce:
    • Reduce the heat to medium-low and pour in the heavy cream, stirring to combine.
    • Gradually add the Parmesan cheese, stirring until melted and creamy.
    • Add the Italian seasoning and red pepper flakes (if using). Season with salt and pepper to taste.
  4. Combine:
    • Return the cooked chicken to the skillet, spooning the sauce over the top. Let it simmer for a few minutes to heat through.
  5. Serve:
    • Garnish with fresh parsley and serve hot, over pasta or with crusty bread to soak up the sauce.
