Chocolate Chip Cookie Dough Ice Cream Cake

(A dreamy, no-bake dessert with layers of cookie dough, ice cream, and fudge!)

This easy, crowd-pleasing cake combines everyone’s favorite cookie dough with creamy ice cream—perfect for birthdays or summer parties.


🍰 Ingredients

Cookie Dough Layer:

  • 1 ½ cups flour (heat-treated to kill bacteria, see note)

  • ½ cup unsalted butter, softened

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • 2 tbsp milk

  • 1 tsp vanilla extract

  • ½ tsp salt

  • ¾ cup mini chocolate chips

Ice Cream Layer:

  • 1.5 quarts vanilla ice cream, slightly softened

  • 1 cup crushed chocolate chip cookies (optional, for crunch)

Toppings:

  • Hot fudge sauce

  • Whipped cream

  • Extra chocolate chips & cookie crumbs


📝 Instructions

1️⃣ Prep the Pan:

  • Line a 9-inch springform pan with parchment paper.

2️⃣ Make Edible Cookie Dough:

  1. Heat-treat flour: Microwave for 1 minute, stirring every 15 sec, until 160°F (71°C). Cool.

  2. Beat butter + sugars until fluffy. Mix in milk, vanilla, and salt.

  3. Stir in flour, then fold in chocolate chips.

  4. Press ⅔ of the dough into the pan’s bottom (save the rest for topping).

3️⃣ Add Ice Cream Layer:

  1. Spread softened ice cream over the dough.

  2. Sprinkle crushed cookies (if using). Freeze 1 hour.

4️⃣ Top & Freeze:

  1. Crumble remaining cookie dough over the ice cream.

  2. Drizzle with hot fudge and add whipped cream swirls.

  3. Freeze 4+ hours (or overnight).

5️⃣ Serve:

  • Let sit 10 minutes before slicing. Garnish with extra chips and crumbs!
