Chocolate Chip Pan Chewies

(The Ultimate Soft & Gooey Cookie Bars!)

These thick, buttery, and extra-chewy cookie bars are like a cross between a chocolate chip cookie and a blondie—perfect for when you want maximum deliciousness with minimal effort.


Ingredients

  • 1 cup (2 sticks) unsalted butter, melted

  • 1 ½ cups packed brown sugar (for maximum chew!)

  • 2 large eggs

  • 1 tbsp vanilla extract

  • 2 ¼ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 cups semisweet chocolate chips (or chunks)

  • Flaky sea salt (optional, for topping)


Instructions

1️⃣ Prep: Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper (or grease well).
2️⃣ Mix wet ingredients: In a bowl, whisk melted butter + brown sugar until smooth. Add eggs + vanilla, mixing well.
3️⃣ Add dry ingredients: Stir in flour, baking soda, and salt until just combined (don’t overmix!). Fold in chocolate chips.
4️⃣ Bake: Spread dough evenly in pan. Bake 20–25 mins—edges should be golden, but the center still looks slightly soft (this keeps them chewy!).
5️⃣ Cool & slice: Let cool 15 mins, then sprinkle with flaky salt (if using). Cut into squares!
