Chocolate Chip Shortbread Cookie Bars

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal, or lightly grease the pan.

2. Mix the Dough:

  • In a large bowl, cream together the softened butter and powdered sugar using an electric mixer or whisk until light and fluffy.
  • Add the vanilla extract and salt, mixing until combined.
  • Gradually add in the all-purpose flour, mixing until a dough forms.

3. Press the Dough into the Pan:

  • Press the cookie dough evenly into the prepared baking pan, smoothing it out to cover the bottom.

4. Bake the Shortbread:

  • Bake in the preheated oven for about 25-30 minutes or until the edges are lightly golden and the center is set.
  • Allow the shortbread to cool in the pan for about 10 minutes.

5. Add the Chocolate Chips:

  • While the shortbread is still slightly warm, sprinkle the chocolate chips over the top.
  • Let the heat of the cookie bars melt the chocolate chips for a few minutes, and then use a spatula or knife to gently spread the melted chocolate over the surface.

6. Cool and Cut:

  • Allow the cookie bars to cool completely before cutting them into squares or bars. The chocolate will harden as it cools.
