Chocolate Covered Cherry Rice Krispies Treats

Ingredients:

  • 3 tablespoons unsalted butter
  • 1 (10 oz) bag mini marshmallows
  • 1 teaspoon cherry extract
  • 4-5 drops red or pink food coloring (optional, for a fun color!)
  • 6 cups Rice Krispies cereal
  • 1 1/2 cups semi-sweet chocolate chips

Instructions:

1. Prepare the Pan:
  • Grease a 9×13-inch baking dish with butter or non-stick spray. Set aside.
2. Melt Butter and Marshmallows:
  • In a large pot over medium heat, melt the butter.
  • Once melted, add the mini marshmallows. Stir continuously until they are completely melted and smooth.
3. Add Cherry Flavor and Color:
  • Stir in the cherry extract and food coloring (if using). The food coloring will give the treats a fun cherry-red hue!
4. Add Rice Krispies:
  • Remove the pot from heat. Gradually add the Rice Krispies cereal to the marshmallow mixture, stirring gently to combine until all the cereal is coated.
5. Press into the Pan:
  • Pour the mixture into the prepared baking dish. Use a spatula or your hands (but be careful, it might be warm!) to press the mixture evenly into the pan.
6. Melt the Chocolate:
  • In a microwave-safe bowl, melt the semi-sweet chocolate chips in the microwave in 20-second intervals, stirring in between until completely smooth and melted.
7. Drizzle the Chocolate:
  • Drizzle the melted chocolate evenly over the Rice Krispies treats. If you like, you can use a spatula to spread the chocolate for a more even coat.
8. Set and Serve:
  • Let the treats sit at room temperature for about 30 minutes to allow the chocolate to set and harden.
  • Once the chocolate is firm, cut the treats into squares or rectangles and serve.

Tips:

  • Cherry Flavor: If you love cherries, you could even add some maraschino cherries on top before the chocolate sets for an extra burst of cherry goodness.
  • Storage: Store these treats in an airtight container for up to 3 days. They can also be frozen for up to a month—just thaw before serving.
