Chocolate Wafers with Cream

Ingredients:

For the Chocolate Wafers:
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
For the Cream Filling:
  • 1/2 cup unsalted butter, room temperature
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, beating until well combined.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Form Wafers: Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheets. Flatten each ball slightly with the bottom of a glass or your fingers to form discs.
  6. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set. Allow the wafers to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  7. Prepare Cream Filling: In a mixing bowl, beat the butter until creamy. Gradually add the powdered sugar, vanilla extract, and heavy cream, beating until smooth and fluffy.
  8. Assemble Wafers: Once the wafers are completely cooled, spread a generous amount of cream filling on the flat side of one wafer. Top with another wafer to create a sandwich. Repeat with the remaining wafers and filling.
  9. Serve: Serve immediately or store in an airtight container at room temperature for up to 3 days.
