🍫 Chocolate Zucchini Bars (Moist, Fudgy & Sneakily Healthy!)

These decadent chocolate zucchini bars are ultra-rich, secretly packed with veggies, and perfect for using up that garden zucchini! They’re naturally moist, gluten-free, and easily customizable—great for snacks, dessert, or even breakfast.

📝 Ingredients

For the Bars:

  • 1 ½ cups shredded zucchini (about 1 medium, squeezed dry)

  • 1 cup gluten-free all-purpose flour (or almond flour for grain-free)

  • ½ cup cocoa powder (unsweetened)

  • 1 tsp baking soda

  • ½ tsp salt

  • ½ cup coconut sugar (or brown sugar)

  • ¼ cup maple syrup or honey

  • 1 large egg (or flax egg for vegan)

  • ¼ cup melted coconut oil (or butter)

  • 1 tsp vanilla extract

  • ½ cup dark chocolate chips (plus extra for topping)

Optional Add-Ins:

  • ½ tsp cinnamon

  • ¼ cup chopped walnuts or pecans

  • 1 tbsp instant espresso powder (for deeper chocolate flavor)


🔥 Instructions

1️⃣ Prep & Mix Dry Ingredients

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.

  2. In a bowl, whisk GF flour, cocoa powder, baking soda, and salt.

2️⃣ Combine Wet Ingredients

  1. In another bowl, mix coconut sugar, maple syrup, egg, melted coconut oil, and vanilla.

  2. Stir in shredded zucchini (squeeze out excess water first!).

3️⃣ Bake to Fudgy Perfection

  1. Fold dry ingredients into wet until just combined. Stir in chocolate chips.

  2. Pour batter into the pan, smooth the top, and sprinkle extra chocolate chips.

  3. Bake 25-30 mins until a toothpick comes out mostly clean (a few crumbs = fudgy!).

  4. Cool completely before slicing.
