Churro Cheesecake Donut Cookies 🍩🍰

These Churro Cheesecake Donut Cookies combine the sweet, cinnamon-sugar goodness of churros with the creamy, rich texture of cheesecake. Perfect for satisfying both your cookie and dessert cravings in one delicious treat!

Ingredients:

For the Cookie Dough:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract

For the Churro Coating:

  • ¼ cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions:

  1. Prepare the Cheesecake Filling:

    • In a medium bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Set aside.
  2. Make the Cookie Dough:

    • In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
    • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until combined. The dough should be soft but firm enough to handle.
  3. Assemble the Cookies:

    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Scoop out about 1 tablespoon of cookie dough and flatten it slightly. Place a small spoonful of the cheesecake filling (about 1 teaspoon) in the center of the dough.
    • Carefully fold the edges of the dough around the cheesecake filling to seal it inside and form a ball. Repeat this process with the remaining dough and cheesecake filling.
  4. Bake the Cookies:

    • Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
    • Bake for about 10-12 minutes, or until the edges of the cookies are golden brown. Keep an eye on them to prevent overbaking.
  5. Coat the Cookies:

    • While the cookies are baking, combine the granulated sugar and cinnamon in a shallow bowl.
    • As soon as the cookies come out of the oven, allow them to cool for a minute or two before gently rolling them in the cinnamon-sugar mixture to coat.
  6. Serve:

    • Let the cookies cool completely on a wire rack. Enjoy these delicious, sweet churro-inspired cheesecake donut cookies!

Tips:

  • Chill the dough: If the dough is too soft to handle, chill it in the refrigerator for about 30 minutes before assembling the cookies.
  • Cheesecake filling variations: You can add a teaspoon of lemon zest to the cheesecake filling for a tangy twist, or even a splash of almond extract for a deeper flavor.
  • Make ahead: These cookies can be stored in an airtight container for up to 4 days, or frozen for longer storage.

These Churro Cheesecake Donut Cookies are a fun, indulgent treat perfect for any occasion or just when you’re craving something sweet. Enjoy! 🍪🎉
