Churro Stuffed French Toast with Cinnamon Sugar

A decadent breakfast mashup of crispy churros and creamy stuffed French toast, coated in buttery cinnamon sugar!


Ingredients

For the French Toast

  • 4 thick slices brioche or challah bread (1.5-inch thick)

  • 4 oz (115g) cream cheese, softened

  • 2 tbsp powdered sugar

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • 2 large eggs

  • ½ cup (120ml) whole milk (or heavy cream for richness)

  • 1 tbsp granulated sugar

  • 1 tsp vanilla extract

  • Pinch of salt

  • 2 tbsp unsalted butter (for frying)

For the Churro Coating

  • ½ cup (100g) granulated sugar

  • 1 tbsp cinnamon

  • 4 tbsp (60g) melted butter (for brushing)

Optional Toppings

  • Dulce de leche or caramel sauce

  • Whipped cream

  • Fresh berries


Instructions

1. Make the Cream Cheese Filling

  • In a bowl, mix cream cheese, powdered sugar, vanilla, and cinnamon until smooth.

2. Stuff the Bread

  • Cut a deep pocket into each bread slice (don’t cut through).

  • Fill each pocket with 1-2 tbsp cream cheese mixture and press gently to seal.

3. Dip & Cook

  • Whisk eggs, milk, sugar, vanilla, and salt in a shallow dish.

  • Soak each stuffed slice for 20-30 seconds per side.

  • Heat butter in a skillet over medium heat. Cook French toast 3-4 mins per side until golden.

4. Coat in Cinnamon Sugar

  • Mix sugar and cinnamon in a shallow plate.

  • Brush cooked French toast with melted butter, then press into cinnamon sugar to coat.

5. Serve Warm

  • Drizzle with caramel, add whipped cream, or fresh berries.


Tips

  • Extra crunch? Add 1/4 cup crushed cornflakes to the egg wash before cooking.

  • Make ahead: Assemble stuffed bread the night before; soak and cook in the morning.

  • Air fryer option: Cook at 375°F (190°C) for 6-8 mins, flipping halfway.
