📝 Ingredients (for 4 servings)
For the Chicken & Marinade:
- 1.5 lbs (680g) boneless, skinless chicken thighs (or breasts)
- ¼ cup olive oil
- Zest + juice of 2 limes
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ cup fresh cilantro, chopped
For the Corn & Feta:
- 2 cups (300g) fresh or frozen corn kernels
- ½ cup (75g) crumbled feta cheese
- 1 avocado, diced (optional)
- Extra cilantro + lime wedges for serving
👩🍳 Instructions
1. Marinate the Chicken
- In a bowl, whisk olive oil, lime zest/juice, garlic, cumin, paprika, salt, pepper, and cilantro.
- Coat chicken in marinade and let sit 15 mins (or up to 4 hours in the fridge).
2. Cook the Chicken
- Heat a large skillet over medium-high. Remove chicken from marinade (reserve marinade) and cook 5-6 mins per side until golden and cooked through. Set aside.
3. Sauté the Corn
- In the same skillet, add corn and cook 3-4 mins until lightly charred.
- Pour in reserved marinade and simmer 1 min.
4. Assemble & Serve
- Slice chicken and top with corn, feta, avocado, and fresh cilantro.
- Serve with lime wedges and tortillas or rice.
