Cilantro-Lime Chicken with Corn and Feta!

🌿 Cilantro-Lime Chicken with Corn & Feta (One-Pan Wonder!)

Bright, zesty, and packed with fresh flavors—juicy chicken, charred corn, and tangy feta all in 30 minutes!


📝 Ingredients (for 4 servings)

For the Chicken & Marinade:

  • 1.5 lbs (680g) boneless, skinless chicken thighs (or breasts)
  • ¼ cup olive oil
  • Zest + juice of 2 limes
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup fresh cilantro, chopped

For the Corn & Feta:

  • 2 cups (300g) fresh or frozen corn kernels
  • ½ cup (75g) crumbled feta cheese
  • 1 avocado, diced (optional)
  • Extra cilantro + lime wedges for serving

👩🍳 Instructions

1. Marinate the Chicken

  1. In a bowl, whisk olive oil, lime zest/juice, garlic, cumin, paprika, salt, pepper, and cilantro.
  2. Coat chicken in marinade and let sit 15 mins (or up to 4 hours in the fridge).

2. Cook the Chicken

  1. Heat a large skillet over medium-high. Remove chicken from marinade (reserve marinade) and cook 5-6 mins per side until golden and cooked through. Set aside.

3. Sauté the Corn

  1. In the same skillet, add corn and cook 3-4 mins until lightly charred.
  2. Pour in reserved marinade and simmer 1 min.

4. Assemble & Serve

  • Slice chicken and top with corn, feta, avocado, and fresh cilantro.
  • Serve with lime wedges and tortillas or rice.
