Cilantro Lime Chicken

Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 3 tbsp olive oil (divided)
  • ¼ cup fresh lime juice (about 2 limes)
  • 2 tbsp honey or maple syrup (optional, for a touch of sweetness)
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup fresh cilantro, chopped
  • Lime wedges (for serving)

Instructions:

  1. Marinate the chicken:
    • In a bowl, whisk together 2 tbsp olive oil, lime juice, honey, garlic, cumin, chili powder, smoked paprika, salt, and pepper.
    • Add chicken and toss to coat. Let marinate for 10 mins (or up to 30 mins for deeper flavor).
  2. Cook the chicken:
    • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
    • Remove chicken from marinade (reserve marinade) and cook for 5-7 mins per side (depending on thickness) until golden and cooked through (internal temp: 165°F).
    • Optional: Pour remaining marinade into the pan in the last 2 mins for extra flavor (or boil separately for 1 min if concerned about raw chicken contamination).
  3. Rest & garnish:
    • Let chicken rest for 5 mins, then slice or shred.
    • Toss with fresh cilantro and serve with lime wedges.

  • Salads/Bowls: Pair with rice, black beans, corn, and greens.
