Cinnamon Glazed Apple Fritter Bites 🍏🍩

Ingredients:

For the Apple Fritter Bites:

  • Nonstick cooking spray (for greasing)

  • 1 ½ cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp kosher salt

  • 2 tsp ground cinnamon

  • ¼ cup unsalted butter, melted

  • ¼ cup granulated sugar

  • 1 large egg, room temperature

  • ½ cup milk (or buttermilk for extra tenderness)

  • 1 tsp vanilla extract

  • 1 ½ cups finely diced apples (Granny Smith or Honeycrisp work well)

For the Cinnamon Glaze:

  • 1 cup powdered sugar

  • 2 tbsp milk (or apple cider for extra flavor)

  • ½ tsp ground cinnamon

  • 1 tsp vanilla extract

Optional Topping:

  • 2 tbsp coarse sugar + ½ tsp cinnamon (for sprinkling)


Instructions:

1. Prep & Mix Dry Ingredients:

  • Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin tin (or a 12-cup regular muffin tin).

  • In a bowl, whisk together flour, baking powder, salt, and cinnamon.

2. Combine Wet Ingredients:

  • In another bowl, mix melted butter, sugar, egg, milk, and vanilla.

  • Gently fold wet ingredients into dry ingredients until just combined (don’t overmix).

  • Fold in diced apples.

3. Bake:

  • Spoon batter into muffin cups (fill ¾ full).

  • Bake 12–14 minutes (mini muffins) or 18–20 minutes (regular muffins) until golden and a toothpick comes out clean.

  • Let cool for 5 minutes, then transfer to a wire rack.

4. Glaze & Serve:

  • Whisk together powdered sugar, milk, cinnamon, and vanilla until smooth.

  • Dip warm fritter bites into glaze or drizzle over the top.

  • Optional: Sprinkle with cinnamon sugar while glaze is wet.


Tips for Success:

🍎 Toss apples in 1 tsp flour to prevent sinking in the batter.
🔥 For extra crispiness, broil for 1–2 minutes after glazing.
🍯 Add a tbsp of maple syrup to the glaze for deeper flavor.
