Cinnamon Roll French Toast Bites

Ingredients:

1 can (8 count) refrigerated cinnamon rolls (with icing)

¼ cup milk (dairy or plant-based)

1 tsp vanilla extract

½ tsp ground cinnamon

2 tbsp butter (for cooking)

(Optional for serving) Powdered sugar, maple syrup, fresh berries
Instructions:

Prepare the Cinnamon Rolls: Open the can of cinnamon rolls and separate them. Using a pair of kitchen scissors or a sharp knife, cut each cinnamon roll into 4 equal-sized pieces.

Pro Tip: If the dough is very sticky, you can dust your hands and the scissors/knife lightly with flour.

Make the Egg Mixture: In a medium bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until the mixture is smooth and well-combined.

Coat the Dough Bites: Gently place the cinnamon roll pieces into the egg mixture. Use a spoon to toss them until they are evenly coated on all sides. Let them sit for a few minutes to soak up some of the mixture.

Cook to Golden Brown: In a large non-stick skillet or griddle, melt the butter over medium heat. Once the butter is bubbling, add the coated cinnamon roll bites in a single layer, making sure not to overcrowd the pan (you may need to do this in batches).

Cook for 2-3 minutes, then flip. Continue cooking for another 2-3 minutes, turning them occasionally, until they are golden brown and cooked through on all sides.

Warm the Icing: While the bites are cooking, place the included container of icing in a bowl of warm water for a few minutes to make it easy to drizzle. You can also microwave it for 5-10 seconds.

Serve Immediately: Remove the French toast bites from the skillet. Drizzle the warmed icing over the top right before serving. They are best enjoyed hot and fresh!
