A Cinnamon Roll Mug Cake is a quick and easy dessert that tastes just like a cinnamon roll, but in a single serving and in just a few minutes! It’s warm, gooey, and perfect when you’re craving something sweet. Here’s a simple recipe to make it in your microwave:

Ingredients:

For the Mug Cake:

  • 4 tbsp all-purpose flour
  • 1 tbsp granulated sugar
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 3 tbsp milk (any kind)
  • 2 tbsp vegetable oil or melted butter
  • 1/4 tsp vanilla extract

For the Cinnamon Swirl:

  • 1 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1 tsp melted butter

For the Glaze (optional):

  • 1 tbsp powdered sugar
  • 1/2 tsp milk
  • 1/4 tsp vanilla extract

Directions:

  1. Make the cinnamon swirl:
    • In a small bowl, mix the brown sugar, cinnamon, and melted butter together. Set aside.
  2. Prepare the mug cake batter:
    • In a microwave-safe mug, whisk together the flour, granulated sugar, baking powder, cinnamon, and a pinch of salt.
    • Add the milk, vegetable oil (or melted butter), and vanilla extract. Stir well until the batter is smooth.
  3. Add the cinnamon swirl:
    • Drop spoonfuls of the cinnamon-sugar mixture into the center of the batter, then use a knife or fork to swirl it into the batter. Don’t mix it completely, as you want it to create a cinnamon swirl throughout the cake.
  4. Microwave the mug cake:
    • Microwave on high for 1 minute and 15 seconds to 1 minute and 30 seconds. The cake should rise and look set in the middle. If it’s still a little wet in the center, microwave for an additional 10-15 seconds.
    • Keep an eye on it, as microwave times can vary!
  5. Make the glaze (optional):
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  6. Serve:
    • Once the cake is done, allow it to cool for a minute or two. Drizzle the glaze over the warm mug cake and enjoy!
