Cinnamon Sugar French Toast Muffins

(Like bite-sized French toast—perfect for breakfast or brunch!)

These easy, custardy muffins taste just like French toast, with a crispy cinnamon-sugar crust. Great for meal prep or feeding a crowd!


Ingredients

(Makes 12 muffins)

For the Muffins:

  • 6 cups stale bread cubes (French bread, brioche, or challah work best)

  • 4 large eggs

  • 1½ cups milk (or half-and-half for extra richness)

  • ¼ cup granulated sugar

  • 1 tbsp vanilla extract

  • 1 tsp cinnamon

  • ¼ tsp nutmeg (optional)

  • Pinch of salt

For the Cinnamon Sugar Topping:

  • ¼ cup melted butter

  • ¼ cup granulated sugar

  • 1 tsp cinnamon

(Optional: Maple syrup or powdered sugar for serving!)


Instructions

1. Prep the Bread

  • Cut stale bread into 1-inch cubes (about 6 cups). If bread is fresh, toast it lightly first.

  • Grease a 12-cup muffin tin or line with parchment liners.

2. Make the Custard

  • In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, nutmeg, and salt.

  • Gently fold in bread cubes until fully coated. Let soak 10–15 minutes (stir occasionally).

3. Bake

  • Preheat oven to 350°F (175°C).

  • Divide the soaked bread mixture evenly into the muffin tin (pack it down slightly).

  • Bake for 20–25 minutes, until golden and set.

4. Add the Topping

  • Brush warm muffins with melted butter, then dip or roll in cinnamon sugar mixture.

  • Serve warm with maple syrup or powdered sugar!


Tips for Success

✔ Stale bread is best! Fresh bread can get mushy—if using fresh, dry it in a 300°F oven for 10 minutes first.
✔ Make ahead: Assemble the night before, refrigerate, and bake in the morning.
✔ Add-ins: Try blueberries, diced apples, or chocolate chips mixed into the batter!
