Citrus Infusions: Lemon Ricotta Pancakes 🍋🥞

Ingredients:

Instructions:

  1. Mix Dry Ingredients:

    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
  2. Combine Wet Ingredients:

    • In a separate bowl, whisk together the ricotta cheese, eggs, milk, melted butter, lemon zest, lemon juice, and vanilla extract until smooth and well combined.
  3. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  4. Cook the Pancakes:

    • Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
    • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, until bubbles form on the surface of the pancake and the edges look set. Flip and cook for an additional 1-2 minutes until golden brown and cooked through.
