Classic Beef Stew Recipe

Ingredients:

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 carrots, peeled and sliced
  • 3 potatoes, peeled and diced (Yukon Gold or red potatoes work well)
  • 2 cups frozen peas (optional)
  • 2 tablespoons cornstarch (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Beef:
    • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Brown the beef in batches until all sides are nicely seared, about 5-7 minutes per batch. Remove the beef and set it aside.
  2. Sauté Aromatics:
    • In the same pot, add the chopped onion and sauté for about 3-5 minutes until softened. Add the garlic and cook for another minute until fragrant.
  3. Deglaze:
    • Stir in the tomato paste, scraping up any browned bits from the bottom of the pot. Cook for another minute.
  4. Combine Ingredients:
    • Return the browned beef to the pot. Add the beef broth, Worcestershire sauce, thyme, and rosemary. Bring to a simmer.
  5. Simmer:
    • Cover the pot and reduce the heat to low. Let it simmer for about 1.5 to 2 hours, or until the beef is tender.
  6. Add Vegetables:
    • Add the carrots and potatoes to the pot. Cook for an additional 30-40 minutes, until the vegetables are tender.
  7. Thicken (optional):
    • If you prefer a thicker stew, mix the cornstarch with a little cold water to make a slurry. Stir this into the stew and let it simmer for an additional 5-10 minutes until thickened.
  8. Finish and Serve:
    • Taste and adjust seasoning as needed. Stir in the frozen peas (if using) just before serving. Garnish with fresh parsley.
