🌋 Classic Earthquake Cake (Gooey, Chocolatey & Irresistible!)

This retro dessert gets its name from the “earthquake-like” cracks that form as it bakes, revealing a fudgy, coconut-pecan filling beneath a rich chocolate cake layer. Perfect for potlucks, birthdays, or anytime you need a decadent treat!

📝 Ingredients

For the Base Layer:

  • 1 cup sweetened shredded coconut

  • 1 cup chopped pecans

  • ½ cup brown sugar

For the Cake:

  • 1 box (15.25 oz) chocolate cake mix (+ ingredients listed on box: eggs, oil, water)

  • 8 oz cream cheese, softened

  • ½ cup unsalted butter, softened

  • 2½ cups powdered sugar

  • 1 tsp vanilla extract


👩🍳 Instructions

1️⃣ Prep the Pan & Base Layer

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Sprinkle coconut, pecans, and brown sugar evenly in the dish.

2️⃣ Make the Cake Batter

  1. Prepare cake mix according to package instructions.

  2. Pour batter over the coconut-pecan layer (do not stir).

3️⃣ Add the Cream Cheese Swirl

  1. Beat cream cheese, butter, powdered sugar, and vanilla until smooth.

  2. Drop spoonfuls over the cake batter, then swirl gently with a knife.

4️⃣ Bake & Let “Quake”

  1. Bake 40-50 mins until center is set but still slightly jiggly.

  2. Cool 30 mins—the cake will crack and sink as it cools (that’s the “earthquake” effect!).

✔ Extra gooey? Underbake slightly (check at 35 mins).
✔ Nut-free? Swap pecans for chocolate chips or omit.
✔ Storage: Cover and refrigerate for up to 5 days (tastes great cold!).
