Ingredients:

For the Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon butter
  • 1 teaspoon garlic, minced
  • Salt and pepper, to taste

For the Fried Rice:

  • 3 cups cooked rice (preferably day-old, chilled)
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon butter
  • 1/2 cup frozen peas and carrots mix
  • 2 green onions, finely sliced (optional)

For the Vegetables:

  • 2 cups mixed vegetables (e.g., zucchini, mushrooms, onions, broccoli)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • Salt and pepper, to taste

Instructions:

1. Prepare the Chicken:

  • Heat sesame oil in a large skillet or hibachi grill pan over medium-high heat. Add the chicken pieces and cook for 4-5 minutes, stirring occasionally, until browned and cooked through.
  • Add butter, garlic, soy sauce, and a pinch of salt and pepper. Stir until the chicken is well-coated and fragrant. Remove from the pan and set aside.

2. Make the Fried Rice:

  • Push the chicken to one side of the pan or use a separate skillet. Heat sesame oil over medium-high heat and scramble the eggs until just set.
  • Add butter and cooked rice, breaking up clumps with a spatula. Stir in soy sauce and the peas and carrots. Mix everything thoroughly, allowing the rice to fry slightly for 3-4 minutes.
  • Toss in green onions (if using), stir well, and set aside.

3. Cook the Vegetables:

  • In the same pan, heat sesame oil over medium-high heat. Add the mixed vegetables and sauté for 5-6 minutes until tender but still crisp.
  • Add soy sauce, garlic, and a sprinkle of salt and pepper. Stir well to coat the vegetables evenly.

4. Combine and Serve:

  • Serve the chicken, fried rice, and vegetables side by side on a platter or individual plates.
  • Pair with yum yum sauce, ginger sauce, or soy sauce for dipping.

Tips:

  • Use day-old rice for the fried rice to achieve the best texture.
  • Customize the veggies based on your preference—snap peas, bell peppers, or bean sprouts also work well.
  • A splash of lemon juice on the chicken before serving adds extra zing.
