Brazilian Coconut and Cheese Pudding (Queijadinha de Travessa)

Ingredients:

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) coconut milk
  • 1/2 cup grated coconut (fresh or desiccated)
  • 1 cup grated Parmesan cheese (or mild cheese like mozzarella)
  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract (optional)
  • Butter or oil (for greasing the baking dish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish (or a similar-sized dish) with butter or oil.
  2. Prepare the Pudding Mixture:
    • In a large mixing bowl, whisk together the eggs, sweetened condensed milk, coconut milk, sugar, and vanilla extract (if using) until fully combined.
    • Stir in the grated coconut, grated cheese, and flour, mixing everything until well incorporated.
  3. Bake the Pudding:
    • Pour the mixture into the greased baking dish. Spread it out evenly using a spatula.
    • Place the dish in the preheated oven and bake for 40-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. The pudding will have a slightly custardy texture inside.
  4. Cool and Serve:
    • Allow the pudding to cool to room temperature. It will firm up as it cools, making it easier to slice.
    • You can also chill it in the refrigerator for a few hours before serving.

Tips:

  • Cheese Options: Traditional Parmesan cheese adds a nice contrast of salty flavor, but you can also use a milder cheese like mozzarella or a blend of both cheeses.
  • Texture: The texture should be firm yet creamy. If you prefer a softer, more custardy pudding, reduce the baking time slightly.
  • Extra Flavor: For extra coconut flavor, you can add a teaspoon of coconut extract or sprinkle some toasted coconut flakes on top before baking.
  • Make-Ahead: This dessert can be made ahead of time and stored in the fridge for a few days. It’s even better the next day as the flavors set.
