Coconut macaroons are delicious treats made primarily from shredded coconut, egg whites, and sugar. They have a chewy texture and are often dipped in chocolate. Here’s a simple recipe for making them:

Coconut Macaroons Recipe

Ingredients:

  • 2 2/3 cups sweetened shredded coconut
  • 2/3 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • 1/4 teaspoon salt
  • Optional: melted dark or milk chocolate for dipping

Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. Mix Ingredients: In a large bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until well combined.
  3. Whip Egg Whites: In another bowl, whisk the egg whites and salt until soft peaks form. This usually takes about 2-3 minutes with an electric mixer.
  4. Combine Mixtures: Gently fold the whipped egg whites into the coconut mixture until just combined. Be careful not to deflate the egg whites too much.
  5. Shape the Macaroons: Use a cookie scoop or your hands to form small mounds of the mixture on the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake: Bake for about 15-20 minutes, or until the tops are golden brown.
  7. Cool: Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack.
  8. Optional Chocolate Dip: If you want to dip them in chocolate, melt your chocolate in a microwave or double boiler, then dip the bottoms of each macaroon into the chocolate and let them set on parchment paper.
