Coconut Pudding

Ingredients:

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 1 cup shredded sweetened coconut
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup water

Instructions:

  1. Prepare the Mixture:
    • In a medium saucepan, whisk together the cornstarch, salt, and water until smooth.
  2. Add Milks:
    • Stir in the sweetened condensed milk and coconut milk. Cook over medium heat, stirring constantly until the mixture thickens (about 5-7 minutes).
  3. Incorporate Coconut:
    • Once thickened, remove from heat and stir in the shredded coconut and vanilla extract.
  4. Chill:
    • Pour the mixture into individual serving cups or a large dish. Allow it to cool at room temperature for a bit, then refrigerate for at least 2-3 hours until set.
  5. Serve:
    • You can garnish with additional shredded coconut or fresh fruit before serving.

Tips:

  • For a tropical twist, consider adding a layer of fruit like mango or pineapple on top before serving.
  • You can adjust the sweetness by using unsweetened coconut milk if desired.
