Coconut Toffee Chocolate Chip Cookie Bars

(Chewy, buttery bars loaded with coconut, toffee, and chocolate chips!)


🍪 Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup brown sugar, packed

  • ½ cup granulated sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 ¼ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 cup shredded sweetened coconut

  • 1 cup toffee bits (like Heath bits)

  • 1 cup semisweet chocolate chips

(Optional: Flaky sea salt for topping!)


📝 Instructions

1. Prep & Preheat

  • Preheat oven to 350°F (175°C).

  • Line a 9×13-inch baking pan with parchment paper or grease lightly.

2. Cream Butter & Sugars

  • In a large bowl, beat butter, brown sugar, and granulated sugar until fluffy (~3 mins).

  • Add eggs one at a time, then mix in vanilla.

3. Dry Ingredients

  • Whisk together flour, baking soda, and salt, then gradually mix into the wet ingredients until just combined.

4. Fold in Goodies

  • Gently stir in coconut, toffee bits, and chocolate chips.

5. Bake

  • Spread dough evenly into the pan.

  • Bake 25–30 mins until golden at the edges but slightly soft in the center.

  • Optional: Sprinkle with flaky salt right after baking.

6. Cool & Slice

  • Let cool 15 mins in the pan, then lift out and cut into bars.
