Collard Greens with Ham Hocks Recipe

Ingredients

  • 2 lbs collard greens, cleaned and chopped
  • 2-3 ham hocks
  • 1 onion, chopped
  • 3-4 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon olive oil or bacon grease
  • Salt and pepper, to taste
  • 1 tablespoon apple cider vinegar (optional)

Instructions

  1. Prepare the Ham Hocks:
    • In a large pot or Dutch oven, heat the olive oil or bacon grease over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the garlic and red pepper flakes (if using) and cook for another minute.
  2. Add the Ham Hocks:
    • Add the ham hocks to the pot, followed by the broth. Bring to a simmer.
  3. Cook the Collard Greens:
    • Gradually add the chopped collard greens to the pot, stirring to submerge them in the broth. You may need to do this in batches as the greens cook down.
    • Cover the pot and let the greens simmer for about 45 minutes to 1 hour, or until they are tender. Stir occasionally.
  4. Season and Serve:
    • Once the collard greens are tender, remove the ham hocks. Let them cool slightly, then shred any meat from the bones and return it to the pot. Discard the bones.
    • Season the greens with salt, pepper, and apple cider vinegar (if using) to taste.
  5. Enjoy:
    • Serve the collard greens warm, either as a side dish or as a main course with cornbread or rice.
