🎉 Confetti Cookie Drip Cupcakes (Makes 6)

Vanilla funfetti cupcakes with a luscious cookie butter drip and fluffy frosting—perfect for birthdays or any celebration!

🧾 Ingredients

Cupcakes:

  • ½ box (1⅓ cup) vanilla/funfetti cake mix or homemade substitute

  • ½ cup water

  • ¼ cup vegetable oil

  • 1 large egg

  • 2 tbsp rainbow jimmies (long sprinkles—avoid nonpareils, they bleed!)

Vanilla Frosting:

  • 4 tbsp (½ stick) unsalted butter, softened

  • 1 cup powdered sugar

  • ½ tsp vanilla extract

  • 1–2 tsp milk or cream

  • Pinch of salt

Cookie Butter Drip:

  • 3 tbsp cookie butter (Biscoff or Trader Joe’s)

  • 1½ tbsp heavy cream

Toppings:

  • Extra rainbow sprinkles

  • Crushed cookies (optional)

📝 Step-by-Step Instructions

1️⃣ Bake the Cupcakes

  1. Preheat oven to 350°F (175°C). Line a muffin tin with 6 cupcake liners.

  2. In a bowl, whisk together cake mix, water, oil, and egg until smooth.

  3. Gently fold in rainbow jimmies (don’t overmix, or colors may bleed).

  4. Divide batter evenly among liners (fill ⅔ full).

  5. Bake for 15–18 minutes until a toothpick comes out clean.

  6. Let cool completely before frosting.

2️⃣ Make the Frosting

  1. Beat softened butter until creamy (~1 min).

  2. Gradually add powdered sugar, vanilla, salt, and 1 tsp milk.

  3. Whip for 2–3 minutes until light and fluffy. Add more milk if needed.

3️⃣ Cookie Butter Drip

  1. Warm heavy cream for 10–15 sec in microwave (should be hot but not boiling).

  2. Stir in cookie butter until smooth. Let cool 2–3 minutes (should be thick but pourable).

4️⃣ Decorate!

  1. Pipe or spread frosting onto cooled cupcakes.

  2. Spoon warm cookie drip around the edges, letting it drizzle down.

  3. Immediately add extra sprinkles and crushed cookies.

🌟 Pro Tips

  • Homemade Cake Mix Sub: Mix ½ cup flour + ¼ cup sugar + ½ tsp baking powder + ¼ tsp salt + 1 tbsp sprinkles.

  • No Bleeding Sprinkles: Use jimmies (long sprinkles) or confetti quins.

  • Extra Fluffy Frosting? Use cold heavy cream and whip for 5 mins.

  • Storage: Keep at room temp for 1 day or refrigerate (frosting firms up when chilled).

💡 Variations

  • Chocolate Drip: Swap cookie butter for melted chocolate + cream.

  • Funfetti Frosting: Fold 1 tbsp sprinkles into frosting.

  • Mini Cupcakes: Bake for 10–12 mins (makes ~12).

These taste like birthday cake meets cookie butter heaven! 🍪🎂 Let me know if you want a vegan or egg-free version. 😊
