Cool & Creamy Cucumber Salad 🥒❄️

This refreshing, crunchy cucumber salad is the perfect summer side—light, creamy, and packed with fresh dill and a tangy dressing. Ready in 15 minutes with no cooking required!


Ingredients

  • 2 large cucumbers, thinly sliced (or 4 Persian cucumbers)

  • ½ small red onion, thinly sliced

  • ½ cup sour cream (or Greek yogurt for a lighter version)

  • 2 tbsp apple cider vinegar (or white vinegar)

  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)

  • 1 tsp sugar (or honey)

  • ½ tsp salt (plus extra for sprinkling)

  • ¼ tsp black pepper

  • Optional add-ins:

    • 1 tbsp chopped fresh chives

    • 1 tsp celery seeds

    • A pinch of red pepper flakes for heat


Instructions

  1. Prep the cucumbers:

    • Slice cucumbers thin (use a mandoline for even slices).

    • Place in a colander, sprinkle with 1 tsp salt, and let drain 10 mins (to remove excess water). Pat dry.

  2. Make the dressing:

    • In a large bowl, whisk together sour cream, vinegar, dill, sugar, salt, and pepper.

  3. Combine & chill:

    • Toss cucumbers and red onion with the dressing.

    • Refrigerate at least 30 mins (or up to 2 hours) for flavors to meld.

  4. Serve cold!

    • Garnish with extra dill or chives.


Tips

✔ Crispier cucumbers? Skip salting if using Persian or English cukes (less watery).
✔ Make ahead? Drain dressed salad before serving if prepping overnight.
✔ Dairy-free? Use vegan sour cream or coconut yogurt.
