Here’s a delicious copycat recipe for Pasta Faggioli soup, inspired by the popular version from Olive Garden. It’s hearty, flavorful, and perfect for any occasion!

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 pound ground beef (or Italian sausage)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup small pasta (like ditalini or elbow)
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for serving)

Instructions

  1. Sauté the vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. Sauté for about 5 minutes until softened.
  2. Cook the meat:
    • Add the ground beef (or sausage) to the pot. Cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
  3. Add the tomatoes and beans:
    • Stir in the diced tomatoes, cannellini beans, and kidney beans.
  4. Add broth and seasonings:
    • Pour in the broth and add oregano, basil, red pepper flakes, salt, and pepper. Bring to a simmer.
  5. Cook the pasta:
    • Once the soup is simmering, add the pasta. Cook according to the package instructions until al dente.
  6. Adjust seasoning:
    • Taste and adjust seasonings as needed.
  7. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley and grated Parmesan cheese.
