Cornbread Dressing Recipe

Ingredients

  • For the Cornbread:
    • 2 cups cornmeal
    • 1 cup all-purpose flour
    • 1/4 cup sugar (optional)
    • 1 tbsp baking powder
    • 1/2 tsp salt
    • 1 1/2 cups milk
    • 1/2 cup vegetable oil or melted butter
    • 2 large eggs
  • For the Dressing:
    • 1 batch of homemade cornbread (or store-bought, crumbled)
    • 1/2 cup butter (1 stick)
    • 1 onion, diced
    • 2-3 celery stalks, diced
    • 2-3 cloves garlic, minced
    • 2-3 cups chicken or vegetable broth (adjust to desired moisture)
    • 1 tsp dried sage
    • 1 tsp dried thyme
    • Salt and pepper, to taste
    • 2-3 eggs, beaten (optional for added richness)

Instructions

  1. Make the Cornbread:
    • Preheat your oven to 400°F (200°C).
    • In a bowl, mix together the cornmeal, flour, sugar (if using), baking powder, and salt.
    • In another bowl, combine the milk, oil (or melted butter), and eggs. Stir until well mixed.
    • Add the wet ingredients to the dry ingredients and mix until just combined.
    • Pour the batter into a greased 9×13 inch baking dish and bake for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
    • Allow to cool, then crumble the cornbread into a large bowl.
  2. Prepare the Dressing:
    • In a large skillet, melt the butter over medium heat. Add the diced onion, celery, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.
    • Pour the sautéed vegetables over the crumbled cornbread. Add the sage, thyme, salt, and pepper. Mix gently to combine.
    • Gradually add the broth, stirring until the mixture is moistened but not soggy. If using, stir in the beaten eggs for added richness.
  3. Bake the Dressing:
    • Transfer the mixture to a greased baking dish and spread it out evenly.
    • Bake at 350°F (175°C) for about 30-40 minutes, or until the top is golden and crispy.
  4. Serve:
    • Let the dressing cool slightly before serving. It’s great alongside turkey, chicken, or as a standalone dish!
