Cornbread Waffle Bites with Smoked Gouda & Honey

Savory-sweet, crispy-edged, and packed with smoky cheese—these cornbread waffle bites are the perfect party snack or game-day appetizer!

Ingredients:

  • 1 cup yellow cornmeal

  • ¾ cup all-purpose flour

  • 1 tbsp granulated sugar

  • 1 tbsp baking powder

  • ½ tsp salt

  • ¼ tsp black pepper (optional, for a hint of spice)

  • 1 cup buttermilk (or whole milk + 1 tsp vinegar)

  • 1 large egg

  • 3 tbsp melted butter (or oil)

  • 1 cup shredded smoked Gouda cheese (plus extra for topping)

  • 2 tbsp chopped chives or green onions (optional)

  • Honey (for drizzling)

Instructions:

  1. Preheat waffle iron to medium-high heat and lightly grease.

  2. Mix dry ingredients: In a bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and pepper.

  3. Combine wet ingredients: In another bowl, whisk buttermilk, egg, and melted butter.

  4. Make batter: Pour wet ingredients into dry and stir until just combined (don’t overmix). Fold in smoked Gouda and chives.

  5. Cook waffles: Spoon 2–3 tbsp batter per section of the waffle iron. Cook until golden and crisp (about 3–4 minutes).

  6. Serve: Cut into bite-sized pieces, drizzle with honey, and sprinkle extra Gouda or chives on top.

Serving Ideas:

  • Dip in warm queso or spicy ranch.

  • Pair with chili or BBQ pulled pork.

  • Make ahead: Reheat in an air fryer for extra crispiness!
