Cornish Meat Pies

Ingredients:

  • For the Pastry:
    • 4 cups all-purpose flour
    • 1 cup unsalted butter, chilled and cubed
    • 1 teaspoon salt
    • 1/2 to 3/4 cup cold water
  • For the Filling:
    • 1 pound beef skirt steak, finely diced
    • 1 large potato, peeled and finely diced
    • 1 small turnip, peeled and finely diced
    • 1 medium onion, finely chopped
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 tablespoon all-purpose flour
    • 1 tablespoon unsalted butter, cubed
  • For the Egg Wash:
    • 1 egg, beaten with 1 tablespoon water

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Make the Pastry:
    • In a large bowl, mix the flour and salt.
    • Add the chilled butter cubes and rub them into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
    • Gradually add cold water, mixing until the dough comes together. Start with 1/2 cup and add more if needed.
    • Divide the dough into 6 equal portions, wrap each in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the Filling:
    • In a large bowl, combine the diced beef, potato, turnip, and onion.
    • Season with salt, pepper, and flour. Mix well to ensure the flour coats the filling ingredients evenly.
  4. Assemble the Pies:
    • On a lightly floured surface, roll out each portion of dough into a circle about 8 inches in diameter.
    • Place a generous amount of filling on one half of each dough circle, leaving a small border around the edge.
    • Dot the filling with small pieces of butter.
    • Fold the other half of the dough over the filling to create a half-moon shape. Press the edges together and crimp to seal.
  5. Egg Wash and Bake:
    • Place the pies on a baking sheet lined with parchment paper.
    • Brush the tops of the pies with the beaten egg wash.
    • Make a small slit in the top of each pie to allow steam to escape.
    • Bake in the preheated oven for 45-50 minutes, or until the pastry is golden brown and the filling is cooked through.
  6. Serve:
    • Allow the pies to cool for a few minutes before serving.
    • Serve warm with your favorite condiments or a side salad.
