Ingredients:
- For the Pastry:
- 4 cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- 1 teaspoon salt
- 1/2 to 3/4 cup cold water

- 1 pound beef skirt steak, finely diced
- 1 large potato, peeled and finely diced
- 1 small turnip, peeled and finely diced
- 1 medium onion, finely chopped

- 1/2 teaspoon black pepper
- 1 tablespoon all-purpose flour
- 1 tablespoon unsalted butter, cubed
- For the Egg Wash:
- 1 egg, beaten with 1 tablespoon water
Instructions:
- Preheat Oven:
- Preheat your oven to 400°F (200°C).
- Make the Pastry:
- In a large bowl, mix the flour and salt.
- Add the chilled butter cubes and rub them into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
- Gradually add cold water, mixing until the dough comes together. Start with 1/2 cup and add more if needed.
- Divide the dough into 6 equal portions, wrap each in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Filling:
- In a large bowl, combine the diced beef, potato, turnip, and onion.
- Season with salt, pepper, and flour. Mix well to ensure the flour coats the filling ingredients evenly.
- Assemble the Pies:
- On a lightly floured surface, roll out each portion of dough into a circle about 8 inches in diameter.
- Place a generous amount of filling on one half of each dough circle, leaving a small border around the edge.
- Dot the filling with small pieces of butter.
- Fold the other half of the dough over the filling to create a half-moon shape. Press the edges together and crimp to seal.
- Egg Wash and Bake:
- Place the pies on a baking sheet lined with parchment paper.
- Brush the tops of the pies with the beaten egg wash.
- Make a small slit in the top of each pie to allow steam to escape.
- Bake in the preheated oven for 45-50 minutes, or until the pastry is golden brown and the filling is cooked through.
- Serve:
- Allow the pies to cool for a few minutes before serving.
