🧀🥬 Cottage Cheese & Spinach Crustless Quiche (High-Protein, Low-Carb!)

This easy, fluffy crustless quiche packs 20g of protein per serving and is loaded with spinach, cottage cheese, and melty cheddar—perfect for meal prep, brunch, or a light dinner! Gluten-free and keto-friendly.

📝 Ingredients

  • 1 tbsp olive oil or butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 4 cups fresh spinach (or 1 cup thawed frozen spinach, drained)

  • 6 large eggs

  • 1 cup cottage cheese (full-fat for creaminess)

  • 1/2 cup shredded cheddar cheese (or feta/mozzarella)

  • 1/4 cup grated Parmesan

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp nutmeg (optional, for depth)


👩🍳 Instructions

1️⃣ Sauté Veggies

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.

  2. Heat oil in a skillet. Cook onion until soft (~3 mins), then add garlic and spinach until wilted. Drain excess liquid.

2️⃣ Blend Egg Mixture

  1. In a blender, combine eggs, cottage cheese, Parmesan, salt, pepper, and nutmeg. Blend until smooth.

  2. Stir in sautéed veggies and cheddar cheese.

3️⃣ Bake

  1. Pour mixture into the pie dish.

  2. Bake 30-35 mins until set and golden.

  3. Let cool 5 mins before slicing.
